Anchovies Recipe – Anchovies with Salsa Verde Please ensure that you use authentic ingredients for all these recipes otherwise the result will disappoint. It may cost a little more but it is worth it and it is now very easy to order

Ingredients: 10 anchovies in salt don’t use those in oil 1 bunch Italian flat-leaf parsley Fresh basil leaves 1 pepperoncino –small chilies 1 hard-boiled egg yolk 1/2 cup good virgin olive oil Lemon juice 1 clove of garlic Instructions: 1) Wash the anchovies very well under running, cold water, to remove all the salt. Remove the fish bones and allow the anchovies to dry. 2) Cook the garlic cloves in boiling water for 3 minutes. Squeeze the garlic out of skins, put into a food processor with all other ingredients except anchovies and whiz until smooth and fluffy. The salsa verde has to have a thickish consistency. 3) Put a little of the sauce on a serving dish and spread the anchovies in a layer over it. Put some more sauce on topKeep on layering until you have no more sauce or anchovies. Let dish stand at room temperature for at least 1 – 2 hours, for flavours to meld.
