Potato Gnocchi Recipe
Gnocchi Recipe with bacon and mushroomsIngredients: 2 x 500g packets potato gnocchi 50g walnuts, chopped 1 packet smoky back bacon ½ onion, chopped 350g mixed mushrooms 4 garlic cloves, chopped 60ml (4tbs) chopped parsley 60ml (4tbs) creme fraiche Olive oil Salt and pepper Method:
1) In a hot pan, toast the walnuts by dry frying them, then set aside.2) Cook the gnocchi according to the instructions on the packet. 3) Fry the bacon until it begins to crisp, then add the onion and mushrooms, and fry until they begin to soften. Add the garlic and fry for a minute more. 4) Toss the gnocchi, walnuts and bacon mix with the parsley and crème fraiche, drizzle with a little more olive oil, season with salt and pepper, and serve.
