It is also very simple but delicious 1) Roast bella tomatoes until soft and sweet and poach garlic cloves in a little olive oil. Add some salt and basil 2) Toss these, together with parma ham and rocket into a bowl of your favourite pasta – rigatoni is ideal but penne is also great to use. 3) Douse the final product with the olive oil used to poach the garlic. Top it all off with a few shavings of parmigiana reggianno (Parmesan).
