Italian Cookies
Italian Cookies RecipeA really simple Italian dessert that takes around twenty minutes to prepare. I would suggest you use almonds if possible. Though they show as optional they do make the recipe just that little bit nicer if added. 3 eggs 1/2 a cup of orange juice 1 cup of sugar 1 cup of oil 1 Teaspoon of salt 1 tsp. of vanilla extract 3 3/4 cups of flour 2 tbsp. baking powder chopped almonds (as mentioned at the top of the page they are optional but I would suggest use them) 1) In a large bowl, beat the eggs, the orange juice, and the sugar. Add the cup of oil and mix together well. Add salt, flour, and baking powder, mix with a wooden spoon (important that it is wooden). Add vanilla extract and chopped almonds (if desired). 2) Shape the dough into two 12" half moon logs and place on a greased cookie sheet. Bake at 350 degrees F until golden brown (about 15 minutes).
