Ingredients: Potatoes, flour, salt, Parmesan and Gruyere cheese, butter, milk, eggs. Cooking Instructions 1) Boil two or three large potatoes, and pass them through a hair sieve, mix in two tablespoons of flour, an egg beaten up, and enough milk to form a firm paste then stir until it is quite smooth. 2)Roll it into the shape of a thick sausage and then cut it into rounds of about three quarters of an inch thick, and allow to dry for about half an hour. 3) Drop the gnocchi one by one into boiling salted water and boil for ten minutes. Once they are ready they will be floating on top of the water. Take them out and put them in a well-buttered dish, add butter between the layers, and sprinkle plenty of grated Parmesan and Gruyere over them. 4)Put them in the oven for ten minutes, brown the topwith a salamander, and serve very hot. You can serve with the sauce of your choice. I normally like a four cheeses or a tomato sauce.
