My Authentic Italian Chicken Recipe
My wife Maria's Italian family have always absolutely loved this authentic Italian chicken recipe and I have to say I do too.
The dish is called Chicken Marengo and originates from the Piedmont area of Italy. It is loved throughout all of Italy too. Ingredients 1 Chicken, cut into pieces 1 tsp Salt a Dash of Pepper 4 tbs of Olive Oil 1 Chopped Onion A half a Clove of Minced Garlic A half a cup of Chopped Tomato A half a cup of Sliced White Truffles (this is optional but in Piedmont, which is home to the world's best truffles, it is usually added) A half a cup of White Wine, Cognac or Sherry 2 tbs Flour 6 Eggs for garnishing, crayfish optional for garnishing - rather go with the eggs, crayfish is virtually never used and egg goes great with truffles. Costs less too! Cooking Instructions 1) Cut the chicken into pieces. Sprinkle with salt, pepper and flour and brown in the olive oil. Put to one side. 2) Saute onions and garlic in the same pan. Add the chicken pieces and the other ingredients, cover and simmer until tender (30-40 minutes). White wine it normally used in Italy instead of cognac or sherry but I find with cognac/sherry it tastes richer. 3) Fry the eggs and place one on each dish as a garnish. Sprinkle with the shaved white truffle. Serves Six.
