Asparagus Recipe (Asparagus Risotto)
This Asparagus Risotto Recipe is very popular in the Piedmont and also in Lombardy. It is very simple to make. You need to ensure that the ingredients are authentic though. I buy all mine through

Ingredients Rice "Extra Fino Carnaroli", 1,2 lb- Beef broth, 20-25 oz-Butter, 2 oz-Parmesan Cheese, 5-6oz. Cream, 2 lb. Fresh asparagus 2 glasses of white wine, half an Onion, salt to taste Preparation: 1) slice onion and add to pan with a table-spoon of butter, gently fry for a few seconds, then pour the dry rice and the two glasses of dry white wine, stir it with a spoon till the wine has evaporated 2) Add 30-35 oz.of beef broth. Cook for about 20 minute and add butter, and chopped asparagus. Add the Parmesan cheese and cream slowly until you have the right creamy consistency. 3) Pour the risotto onto a large serving bowl and add 4-8 whole asparagus (steamed) – sprinkle the whole with 2 tablespoons of Parmesan.
